Although I'm not surprised. Wusthof makes excellent knives, MADE IN GERMANY!!! Not China. It cuts through steak like butter. I am so used to dull knives from before, I already cut myself a couple of times (my fault) with these because they are seriously sharp. They are definitely more expensive but more than worth it. They last forever. Highly recommend ANY knives from Wusthof!

I had purchased this Wusthof set of 4 to replace this item, J.A. Henckels International Eversharp 8-Piece Steak Knife Set . The JAHI had been a let down from very early on; the tips had bent on the majority of those knives and just recently, a tip broke off! No dishwasher, so they were always hand washed, and always stored in a knife block. I know there are different levels of JAH, but the International level is absolute garbage.The Wusthof, so far, haven't let me down. Trimming fat off a hunk of roast is a breeze. Slicing baked chicken breasts and grilled london broils is nice & smooth. I had this set, along with 4 leftovers of the JAHI knives out for Christmas. 13yo DD made sure she got a good knife, the Wusthof, her words.Very happy with this purchase and am ordering another set immediately after this review is submitted. JAHI's going into the trash, pronto.
I bought these steak knives a couple of years ago and they have been just awesome. They are incredibly sharp straight out of the box and have held up to consistent usage without ever dulling. I hand-wash them, so not sure how they would hold up in a dishwasher. Overally, highly recommended.
Let me start by saying, there is no comparing these knives to the Classic line of Wusthof knives. If you can afford the Classic line then I recommend you go there and don't look back. The review, however, is for the Gourmet line. I was a little disappointed. Don't get me wrong, they are good knives from a reputable manufacturer, but they feel a little "thin" for my taste. The blade has more flex than I prefer, and the handles don't fill my hand comfortably. But to be fair, not many do, I have big hands. The blade's finish is also a bit lackluster, but this is their budget line. Now for the good stuff. These things cut through the toughest meat like butter. I can get a razor edge on these knives with a proper stone, which I could not do with our last set of knives. In fact, this is my wife's biggest complaint. They are too sharp, and she cuts herself occasionally. They do spot a little when you run them through the dishwasher, but it hasn't been much of a problem. They probably should be hand washed though. All in all, they are decent knives that hold a great edge (never get serrated knives). So, are they worth the money? It depends on what expensive means to you. You could probably find a similar knife "Made in China" for less, but I would rather have the knife that was made in Germany.
These steak knives actually made our steaks taste better! Yes, that's not hyperbole. As they say in the description, getting a nice sharp cut through your steak that doesn't squeeze all of the juice out of the cut of meat makes a difference. If you think about the science of meat (see McGee's work on food) it makes sense that you don't want a blunt knife to saw through the meat and squish all the lovely flavor out of it.These knives are as well-made as your kitchen cutlery. And why shouldn't your steak knives be nice? If you are used to using crappy serrated, dull steak knives like they hand you at the local steakhouses, these might just be a revelation.Good quality, nice feel, well-balanced and attractive looking, these knives have made us want to make steak more often.
When I wanted to purchase new steak knives, I felt that I needed the serrated-edged style, thinking they would be the best in cuting through meat. In my house, items must be versatile. A professional chef will cringe as I admit that in the past my children have used our steak knives for cutting apple slices one-by-one while sitting and doing homework or watching the tele. These were put to the same test. So when these arrived, I had to give them a lesson on how to use these knives appropriately and I attached a warning. SHARP!!! Sharper than the serrated knives we'd all been using previously. So far no casualties. I love them so much that I use these knives for slicing and cutting everything! Great knives are a must in any kitchen. These are versatile enough to use them as a parry knife and although we do not have steak every night, they are earning their price tag.
I searched through Amazon looking at the different steak knives and their reviews. I decided on these because of the following: 1. They appeared to be of a medium vice entry quality; 2. They are non-serrated thereby allowing me to sharpen at home using my honing steel and/or knife sharpener; and 3. They go well with my mid-quality J. A. Henckels International Classic kitchen knives. I am not a knife expert, but an average person would be hard pressed to not like or find any material fault with these steak knives. I noticed one reviewer mention that they were a bit thinner than other Wusthof knives. However, I found them to be reasonably thick (they are not tinny) and quite satisfactory. They are steak knives, not kitchen knives. I feel this is a good quality product and am well satisfied with my purchase of them. I hope this review helps fellow Amazon customers because I know many of the reviews for steak knives are quite diverse.
Do not buy if you want to wash these knives in your dishwasher. They are priced as a nice knife set but with their very thin blades, they feel like knives you will find at a discount store. These were gifted for Christmas and by Its January 8th, we can see rust spots. Our prior knife set lasted 25 years and no rust. I would not buy theses knives again, nor would I recommend them to any one not want to make rust!
