These knives are very sharp and it's clear they will most likely last a few decades. I was used to using dull knives and there was a bit of a learning curve while adjusting to them. I have cut myself a dozen times so far but that's clearly just my own stupidity. These knives are very well balanced and look great too. The company I purchased them from, JL Hufford has done everything they can to make a satisfied customer. Unfortunately the little metal insignia on the block was upside down. I was able to fix it very easily though. JL Hufford was willing to send me a new block to recitify the situation but that wasn't needed. 5 stars for the knives and 5 stars for their customer service
The knives have a secure grip even when hands are wet. Easy to keep the knives sharp by using the honing steel and never cutting on anything except wood cutting boards. I previously used the Classic Wusthof knives, which are great knifes, but the Classic Ikon is much more secure in my hand under all cutting conditions! The Classic Ikon also has a better balance in hand. I find I have less nicks (none) compared to a knife that slips and turns in my hand. Well worth the additional price over the Classic Wusthof!
I bought my first Classic IKON chef's knife about a year ago, and love the balance of the knife and the edge that it takes.Decided to go all-in on a set. This is a very good value! The individual chef's knife was about half the cost of this entire set.I also have a set of Wusthof Gourmets, which are good, but don't take as good an edge or have the same balance in the hand. These blades are forged vs. stamped and you can actually hear the difference on the honing steel. The Gourmets don't quite ring the way the Classic IKON blades do.
Ordered 11-piece with 17 slot knife block (as advertised), received 15 slot block. Our issue is not with the knives, it's with the block. Not only is it short two slots, it looks like it was made in a high school wood shop. The quality is not good and it does not resemble, not even closely, the acacia wood grain or color in the illustrations. The Wusthof emblem is a cheap medallion glued to the block. It looks so bad that we do not want it on display in our kitchen. What we want is what we thought we were purchasing - a nice looking acacia stained block with 17 slots, as advertised.
I've always been a fan of wusthof, and so, with me starting a new chapter in life, moving out, I bought these as my kitchen essential. I owned one previously but not a block set, so this was very nice to have as a starting kitchen item. I picked the classic ikon because of the weight provided. I love heavy knives and I can't go back to the ones that doesn't provide weight.But like always, please take care of your knives. If you only use them at home and not at a restaurant setting, you don't have to sharpen with a whetstone very often. Just sharpen it right and well one time, and use the hone tool the rest of the way. You should only need to sharpen your knives a few times a year.Always wipe down your knives dry after hand washing to prevent rust. Do not stick it in the dish washer.If you don't know how to sharpen or hone, look up videos and there are whetstone angle tools out there for you to buy if you look around.Take care of your kitchen babies.
I have been a chef fir over 30 years. i bought my first wusthof knife in culinary school. this is only the 3 set i have bought. love the ikon handles. these are the best culinary knives you can buy. trust me.
My wife and I cook non-stop. We had an old set of knives that one day squished a lime before cutting it...that was the last straw. I did a few weeks of research and came to the conclusion that Wusthof was the best value. They are right up there in quality with any other knife, but are priced much better than some of the others of the same quality. The Wusthof website also offers a lot of help for those who need it regarding maintaining your knives - telling you the difference between honing and sharpening and how often to do each and HOW to do each.1 week in these knives are great. We've cooked every night and these knives just flat-out get the job done. Meats, vegetables, anything...these knives make it easy. They also are great for cutting thin slices when you need it. So far, we couldn't be more pleased.Initially - the chef's knife came with a tiny chip in the blade near the top, but I contacted the seller and they already have a replacement chef's knife on the way with a return label for the chipped knife. If they didn't take care of it, I called Wusthof USA and they said they would take care of it. Really good to know the service is that great.
My gf has the same set and I love it. So I decided to get this set too. Her block is engaved with wusthof and I think it looks slick. The one that is pictured is a engaved one but the one I got has a sticker plate stuck to it. Look a little more cheesy or cheap to me especially for an expensive set of knives. I would have given more stars but I don't think there service is as good as it could be. Costumer service isn't what it used to be. It's not my fault they have the wrong block pictures but with the response below I was kind of put off. I was going to order more knives in the future from them but if there costumer service is like this I'll send my money elsewhere. Again the knives came and there awesome. Just not happy with the block. This is my first review ever. Sad it's not a good one but I felt like buyers should know!Just beware. So these are nice knives, yes, but the metal is noticeably thinner on them than an identical set that I purchased some 20 years ago. Kind of makes me sad that everything seems be getting more cheaply made while simultaneously becoming more expensive. We all know why that is, of course--profit. But when you buy something "German made," you're doing so in great part because you want a product that puts quality first, and you're essentially saying that "I'm willing to pay for quality." When you put out the money, you want the quality. You're no longer getting it with these knives, and that is, as I said, disappointing.
