Fantastic work horse knife. Sharp, retains edge, makes life working in a kitchen easier.
It’s more how you treat your tools than how they start out. Treat this knife badly: it’ll be a bad knife. Anyway, you get what you expect from an almost $200 knife: great construction, good aesthetics, good brand recognition. This is such a great knife. It is high quality and extremely sharp. I guess it would be a good idea to have experience in handling this type of knife. If you do then you will appreciate what an amazing chef's knife this is.
You'd have to be real nitpicky to not give a Wusthoff Classic a 5 star. They're made well and hold and edge well. There's a reason Gordan Ramsey is usually holding a Classic or an IkonI'm very happy with this thing and I wish I just sucked it up and spent the cash on one sooner.The extra length has been wonderful as I prep and can large amounts of garden produce.The only "downer" is that the 10" probably isn't for you if you don't have a large cutting board.
This knife is a conversation starter--your guests may not have ever seen a knife of this size (it is not comically large, just decently big). That being said, where it shines in form, it does likewise in function--the heft of this blade gives you much greater latitude to cut things quickly, and the bolster makes its use less intimidating. There are probably more stylish options out there, but by no means is this line or knife strictly utilitarian.I have yet to try it on squash, melons, and large cuts of meat, but this is where you may find a knife of this size helpful, according to other reviewers. Unless you are trying to get by with one chef's knife (this is by no means unreasonable), I believe you get more with a 10 inch blade than an 8 inch blade, because smaller knives can do the more delicate tasks. If you want your chef's knife to shine when it slices and dices, and don't mind the flair that comes with a large blade, this is the blade for you.

I have been a serious home cook for more than 25 years, so I really looked forward to getting this top of the line Wusthoff 10" knife. I have a 8" Zwilling Henckels 4 Star that I have loved for over 20 years. I keep it very sharp with regular honing and occasional sharpening. This knife just did not come out of the box with the razor sharp edge I was expecting. I tried cutting various vegatables and some meats. Tomatoes are my prime test for a sharp knife. It did the job, but not effortlessly. The feel and balance is great, and the greater length and heft make it a great choice when you have a lot of vegetables to prep. I just wish it was sharper. I will check with a cutler to see what they recommend.
