I purchased this knife to fill a gap. Prior to the Mercer Nakiri knife, I used a six inch Wusthof Classic chef’s knife to cut vegetables. Fine for cutting smaller vegetables. I just don’t have the knife skill to cut those paper-thin onion slices I love on a sandwich. “Get a Santoku,” I thought. Almost did. I stumbled across Nikiri knives while researching Santokus. *groan* More diving into online reviews and knife forums. Mercer fit the bill. Established reputation, German steel, NSF, right look. I pulled the trigger and anxiously awaited the arrival of my new vegetable slayer.I put the knife to work right away. Right out of the package this knife is sharp. I had no problem cutting through root vegetables, peppers, tomatoes, and, yes, paper-thin onion slices. Yum.I like that the heel tapers off at the back of the blade, making it easier to sharpen. The rivets are level with the handle. I compared the shape of the handles on the Mercer and Wusthof. The Wusthof’s handle is rounder at the top and a little thinner. My wife, whose hands are smaller than mine, found the handle on the Wusthof more comfortable. For me, the Mercer feels perfect. I like the weight of the knife, my wife prefers something lighter. If I recall, the Wusthof was more than double the price of the Mercer. Whether or not the Nikiri blade keeps its edge will determine if I buy another.So far the only let down was the packaging. Blister packs are a nuisance.
Mercer is now my go to brand of knives on Amazon. I wish I had tried these before I bought several other brands. These are stout and have a good weight to them. Sharp is expected, blade edge is holding up well.
This knife is great after a good sharpening - half the blade was dull out of the box.
I saw a review of this brand in a major cookery magazine. Am very happy knife. Seems to, initially at least, keep it's edge. Good balance. Easier to cut veggies than with my 8" Chef knife (from a high end, expensive manufacturer). Also bought a smaller peeling knife from this manufacturer that is very acceptable, as well. Will buy this brand in the future. I do recommend hand washing as advised by Mercer. This is standard for me with all my knives so nothing new there.
I really enjoy cooking, even more so this past year while quarantining. At 66 yrs old, I realized that my kitchen tools -knives primarily needed an upgrade. My nephew graduated from The International Culinary School at the Art Institute of Pittsburgh. I contacted him for a recommendation & Mercer knives were his personal choice for the tools of his trade. His words “they feel good in your hand & easy to sharpen & not overly expensive.” I concur, having only bought this one, so far. I will be adding more, after feeling the quality & ease of use. 👍
Just a good, solid, reasonably priced knife. NOT made in China, which is frankly it's biggest and best selling point.Sharp out of the box, with no blemishes. Held up well so far after a few weeks of nearly daily vegetable and fruit prep on wood cutting board.
This knife is perfect for day-to-day general use for household.Purchased because size is good for smaller hands, petite person.Appreciate that the quality and price and and now know the brand; will bepurchasing the bread and utility knives next.
I would have gone 5 stars all day... but the three knives I ordered retained a sharp edge along the bolster that can be an issue if using these knives for long periods. I had to sand these edges down with 800 emery paper. Not a big deal... but these surfaces should be finished off. The only sharp area on a knife should be the edge. For the money these are still a great value.
I prefer to hand chop my cabbage. This knife made all the difference in the world for getting nice thin slices with less hand strength. I don't dread cutting up my veggies now. Be careful cause it is sharp!
This is the best knife I own. It truly makes the cooking process easier. It is extremely sharp and very sturdy. I like the riveted handle, which will make it last for many years. It is also well balanced. I have had the knife for a few months now and it does hold an edge.
