Beautiful, amazingly sharp.
What a beautiful knife this is! I was looking for a few new good knives and came across this one. I was skeptical about buying a white knife for the kitchen it just seemed odd to me to have a white knife since I have always used black ones. Well I’m so glad I ordered this one it is so much better than I ever expected. My hands are small and I have a hard time finding a knife that fits my hand. This one is perfect and I’m going to order some more. It’s sharp and surely gets the kitchen cutting done ! I so love everything about it I’m going to have it for many years
Nice comfortable knife for large hands
Wife uses a paring knife every day. Got her this one to give her Cutco knife a break. First time she used it she says " oh, this is nice". I did good and she is thrilled. Knife is very well made and looks great. Not cheap, but worth the money.
I usually use Ceramic kitchen knives, but this little 3.5 inch Wusthof Ikon Paring knife with the ergonomic handle is just excellent. I fits my hand very well and the blade came razor sharp. The blade is easy to maintain when used on a proper cutting board and the cutting edge is easy to align with a ceramic honing rod. I liked this Ikon Wusthof so well I purchased three more of the Wusthof Ikon knives. (A 4.5-inch cutter, a 5-inch serrated blade and a 6-inch slicer.) Great knives~!
Beautiful knife. Wusthof knives are pure German quality. Great blades and construction. You can't go wrong buying them. The Ikon creme knives are one of my favorite kitchen knives.
I own a Ikon Blackwood paring knife equivalent of this knife ( Wusthof Ikon 3-1/2-Inch Paring Knife, Blackwood ). Ikon Blackwood and Ikon Classic series are essentially the same, except for the handle. Ikon Blackwood handles are made of Grenadill wood, wheras Classic Ikon handles are made from hard plastic. As such, I like to share my experience with a knife very similar to this Classic Ikon paring knife.In short summary,Pros: Decent stainless steel grade, excellent reduced bolster design, excellent ergonomic handle, good weight, an overall attractive knifeCons: Not inexpensive, the knife balance may shift too much to the handle for a paring knife.The two Ikon lines are forged knives made with a good quality steel blade, an ergonomic handle, a full tang, a reduced (heel-less) front bolster and an additional bolster at the end of the handle butt. Despite the marketing statements claiming it is a high carbon stainless steel knife, it isn't "high-high". X50CrMoV15 is the stainless steel grade here, so it has 0.5% carbon and that is not considered high by today standard. In contrast, VG-10 (used in Shun Classic knives and Shun Pro knives) has 0.95%-1.0% carbon and SG-2 (used in Shun Elite) has 1.25-1.45% carbon. Nonetheless, X50CrMoV15 makes a tough knife with good corrosion resistant. In other words, the edge rolls easily compared to most Japanese knives, but this steel has good resistance against chipping and rusting.What I really appreciate about the Ikon line is its reduced bolster. The traditional full bolster which extends the entire knife heel makes sharpening difficult. Ikon solves this problem nicely by reducing the bolster. The knife edge is fairly sharp out-of-the-box compared to other knives, but it could have taken a more acute edge. I further sharpened it on diamond stone and then on Japanese waterstones. I can vouch from my experience that the reduced bolster has made the knife much easier to sharpen. The ergonomic handle is truly ergonomic as it claims. It fits my hand nicely. The second bolster on the back of the handle shifts the center of gravity significantly toward the handle. It probably works better for blade-heavy knives, like a Chef's knife, but for a small blade paring knife, I feel it may have shifted the weight slightly much toward the handle. Still, it is not too bad and I can certainly adapt to. I think if you are looking for a very sharp, thin and nimble paring knife, this isn't it. However, if you are looking for an attractive paring knife with good ergonomic handle, decent weight and good corrosion resistance, then this Ikron Classic should be up for consideration.
What can I say...this knife WILL cut
I took advantage of a great deal on amazon to add this knife to my collection. I also have the Ikon 8" chef's knife in creme so I guess the fact that it matched made a difference as well. That aside, I really don't use this knife much at all. I use a peeler to peel things like potatoes etc, and I use my 6" and 8" chefs knives for just about all my chopping needs so I haven't really found a use for this knife. The small size makes it a little awkward and less convenient than something larger. I thought I'd use it to cut garlic cloves and while it may be useful for slicing a garlic clove, a larger knife minces garlic a lot faster and safer. I'll keep it in my collection but I wouldn't recommend buying it on its own unless you know you'll use it and have a specific purpose.Update: While I still don't use this knife often, it has proven to be perfect for avocados and mangos.
Knife came with an uneven grind. For a knife of this price this should not happen. Does not stay sharp very long.
