Perfect for cutting briskets, prime rib or any large roast. Be careful though, this knife is very sharp..the little blade cover it comes with, the knife cut right thru it and also left a pretty nice gash on my thumb! SO DO NOT TRUST THE BLADE GUARD!
Very happy with the knife! It made quick work of slicing 5 briskets! This knife comes well sharpened. We did purchase the Universal Knife Edge Guard for the 14" sleeve as recommended and it works well to protect it. The Gourmet knife is everything you need in a brisket knife... good quality, easy to use and lives up to the Westhof standard. We'd purchase again and again,
As some reviewers have stated, this is not a knife, its a freaking meat sword! I purchased this specifically to carve prime rib during the holidays. It cuts uncooked and cooked meat like butter! I'm not talking about small pieces of meat! I'm talking about 20+ pound prime rib! No issues with the blade flexing and or getting stuck. Glides easily through the meat. When prime rib goes on sale during the holidays, I purchase an extra rib and cut it into ribeyes.The one thing I don't like about the knife is that it comes from Wushof's "gourmet" line. My other Wushof knives feel higher quality and have a sturdier handle. But for as often as this knife gets used (a few times a year), this isn't an issue.
This is the best carving knife I have ever used.
You know how when you watch Samurai movies, they are always carrying a shorter sword on their hip in addition to the longer Katana? This thing looks about the size of that smaller sword, and seems like it is designed to carve plate-sized slices off of giant slabs of meat.Out of the box, it is razor sharp. Quite literally - I keep a box cutter and xacto/utility knives in the kitchen for trimming meat and making garnishes, and this thing definitely feels just as buttery going through cooked or raw meat, and it will slice tomatoes paper thin with ease. Like all Wusthof knives, it is well balanced, and feels natural in the hand.The only downside of this knife is that it is quite expensive for a half-tang, stamped blade. But even that sort of makes sense for a slicer, as stamped steel lends itself to thinner, more flexible blades, which is exactly what you want for precision slicing.
This isn't a knife, it's a meat sword! I have a number of Wusthof knives and I've always like them. Treat them well and they stay sharp, have great balance and are easy to use. This is no different.I regularly smoke brisket and large roasts, and I've never gotten slices as thin as I was able to with this knife on my roasts especially. I'm talking nearly deli thin (I'd post pictures but it was all summarily eaten by the family before I thought to take any). It cut through the bark on my brisket exceptionally well.I think my favorite element of the knife, however, it it's balance and heft. I have small hands, so wielding something large can be difficult to keep balanced, but this knife is just really well done. The hollow edge probably helps with this a ton.The only thing I'd like better is if Wusthof provided a real edge guard instead of just the flimsy plastic sleeve. I ordered the Messermeister edge guard and it's perfect. For the quality and price Wusthof charges for their knives, that would be just a perfect little touch to have that part of the package on something this large, since it's not likely to fit in any knife block a person owns.
Arrived yesterday. Will start out by saying, this knife is big. Will be perfect for cutting brisket.. Very durable and sharp. I will also like to add that it’s so nice looking, Freddy Kruger or Jason would be jealous. As soon as U are done using this bad boy, better clean and hide it from them!! They will definitely want this knife..haha
Received as expected. Just love German knives. Been wanting one of these slicers. Nice and sharp. Used it to slice brisket and homemade bacon. No problems. Great product! Highly recommend it.
got this for my lady for her birth day as shes a chef and she is a big wusthof fan i gat it to her early because i was very excited n she made another remark about how flimsy her usual one is so it was go time she opened the box her face lit up she was beyond happy couldnt have been any better the down side however was theres a defect in the blade so were in a situation where its way better than the one shes using at the moment so she can use it or she keeps using her old flimsy one n wait the exchange time frame which with the holiday season being upon us isnt a great situation either decisions decisions
