    Awesome knife, keeps its edge with regular use. Comfortable to hold for precision control.The qualities of a great knife aren’t whether its sharp out of the box, but rather 1.) how easy it is to hone with a steel and return its edge after it dulls from regular use and, 2.) how frequently you will need to completely restore the original edge with a more aggressive stone sharpening. A great knife, like the Wusthof Ikon will withstand frequent honing to return its razor edge without the need of stone sharpening, which over the long term can potentially damage even the best knife.When I was a professional chef my daily workhorse tool-of-the-trade was the splendid work of art 12” Wusthof Classic, which I would hone with a diamond steel 3 or 4 times over the course of a shift, and would only send to a professional sharpener once every 6-9 months. The Classic only needed to be stone resharpened when honing wouldn’t return the razor edge. The disadvantage to stone sharpening is that it removes metal and over the course time will alter the shape of the blade.Cheap knives do not hold their edge and need aggressive stone resharpening frequently, if you want a sharp knife.Now-a-days as a casual home cook, the Wusthof Ikon 8” is perfect, it only needs to be honed with a diamond steel once a week and I might resharpen it to an 11° angle with an electric stone-diamond sharpener once a year. My home kitchen counter top space limits me to a smaller cutting board (12x24”) that won’t accommodate a larger knife, but then again, these days I’m not prepping dinner for 300 people.The color of the handle is an aesthetic choice.The knife was shipped by Fedex and came in the original manufacturer’s box.

    After years of using a knife set from a previous anniversary gift, it was time to up my game and get serious about a professional's knife. This is my first Wusthof knife (it certainly will not be my last). I have a BESS-C knife sharpness tester. Out of the box, this knife scored a 200 (which equates to the sharpness of a utility razor blade.) Amazing. I can cut paper-thin slices of tomatoes. That's right... paper thin. Cutting beef or other hearty meats is a breeze. Chopping herbs, dicing onions, mincing garlic, cutting corn off the cob... you name it. This knife makes food prep a joy rather than a chore. Yes, it's expensive. But if you prepare your own meals, you know how much time it takes to get all the ingredients ready before you actually cook. This makes prep actually enjoyable.Wusthof knives also have a limited lifetime guarantee. I highly recommend this knife for any home cook looking to enhance their food prep.

    I ordered a used marketplace knife for $135. The knife came in perfect condition, no scratches or any sign of being used, just no box. This does not matter to anyone buying brand new though.This is a fantastic knife. High quality german knife, perfect fit and finish, good edge geometry, sharp OOTB, beautiful handle.Now as far as will you like this knife. This is not a light knife by any means, it is a western style german steel knife that is quite handle heavy and not designed for a pinch grip (although absolutely can be used comfortably if you desire). Balanced about half an inch behind the bolster with a blade shape that is designed for rock chopping and boy does it do a great job at what it is designed to do.I chose the classic ikon even though I already own a 9.5" Classic from wusthof because of the half bolster design which allows me to sharpen the entirety of the blade, the super pretty handle, the handle ergonomics, and the slightly shorter blade length at 8" which is what I was looking for (my daily driver is a 240mm Japanese chefs knife, the wusthof is my tougher, secondary knife at work).This would be a fantastic knife for anyone from professional to home cook. You can absolutely argue the price point and my review is also biased because of the price I got mine for. I would not have paid full price for this knife and I do believe there are options that are cheaper that offer the same quality and performance. BUT, if you don't mind spending a few extra bucks to know that you are getting a quality, tried and tested brand name knife then go for it, I just couldn't justify the full price myself, especially since I generally always use Japanese knives.

    Me ha encantado. Filo de fábrica impresionante. Mucha comodidad en el mango anatómico. Tengo también un global g2 y su mango se me hacía pequeño, pero este va perfecto. El color me gusta, es distinto a los que tenía. Su peso me parece adecuado. Le compré la funda original y encaja perfectamente. Al contrario de lo que leí a mí no me resulta incómodo al agarrarlo con la técnica de pellizco.

    Das Messer ist gut verarbeitet und fühlt sich gut in der Hand an.Durch das Chrom-Molybdän-Vanadium-Stahl ist das Messer anfangs sehr scharf. Die Schärfe muss sich nur gut halten. Andererseits bricht dieses Stahl etwas seltener an der Schneide, wie die harten Messer aus Japan (wegen dem hohen Anteil an Kohlenstoff). Ein guter Allrounder.Es wäre super gewesen wenn die Schneidekante noch etwas feiner geschärft worden wäre.
